Baked Beetroot And Dried Apricots

  • 2 large beetroots, do not peel
  • 1/2 cup raisins
  • 8 dried apricots
  • S+P
  • 1 splash of water
    (Some vegetable broth)


  1. Preheat oven to 180C
  2. Cut up washed beetroots
  3. Place beetroots and dried fruit into baking dish
  4. Coat everything with some broth, salt and pepper
  5. Add another good splash of water
  6. Put into hot oven
  7. After 40 minutes add another splash of water and stir so that raisins do not burn
  8. If you cut the beetroots into chunky pieces they will take about 1 hour to get soft
