
Baked Beetroot And Dried Apricots
Ingredients
2 large beetroots, do not peel
- 1/2 cup raisins
- 8 dried apricots
- S+P
- 1 splash of water
(Some vegetable broth)
Instructions
- Preheat oven to 180C
- Cut up washed beetroots
- Place beetroots and dried fruit into baking dish
- Coat everything with some broth, salt and pepper
- Add another good splash of water
- Put into hot oven
- After 40 minutes add another splash of water and stir so that raisins do not burn
- If you cut the beetroots into chunky pieces they will take about 1 hour to get soft
