
Carrot And Coriander Soup
Ingredients
2lbs Carrots (I like to use organic)
- 2 Onions
- 2L or 3.5 pints Vegetable stock or use water and stock powder
- 2 Tablespoon chopped fresh coriander
- 1/2 teaspoon dried coriander powder
- Salt/Pepper for seasoning
- 6 Tablespoons coconut milk
Instructions
- Peel and chop carrots and onions
- Add vegetables to stock
- Add dried coriander
- Bring to the boil and then simmer for 30 minutes
- Blend, using a hand-blender until smooth
- Add salt and ground pepper to taste
- Add 6 Tablespoons of coconut milk and stir
- Add fresh coriander before serving
