Carrot And Coriander Soup

Ingredients

  • 2lbs Carrots (I like to use organic)
  • 2 Onions
  • 2L or 3.5 pints Vegetable stock or use water and stock powder
  • 2 Tablespoon chopped fresh coriander
  • 1/2 teaspoon dried coriander powder
  • Salt/Pepper for seasoning
  • 6 Tablespoons coconut milk

Instructions

  1. Peel and chop carrots and onions
  2. Add vegetables to stock
  3. Add dried coriander
  4. Bring to the boil and then simmer for 30 minutes
  5. Blend, using a hand-blender until smooth
  6. Add salt and ground pepper to taste
  7. Add 6 Tablespoons of coconut milk and stir
  8. Add fresh coriander before serving
  9. Enjoy!
