
Chickpea Flour, Corn & Courgette Fritters
Description
Makes 3 fritters.
If hungry, it’s perfectly okay to eat all 3. Otherwise, eat two as a main meal and set aside one for a snack.
Ingredients
- 1/2 a medium courgette /zucchini, grated
- 1/4 cup corn or peas [canned, frozen and thawed or fresh]
- 3 flat tablespoons chickpea flour / also called besan
- Onion powder, cracked pepper, and pinch of salt [optional]
- You can add your own spices.
Instructions
- Grab a bowl and grate the courgette, then add all the other ingredients.
- Mix to make it into a sloppy batter.
- The grated courgette provides the moisture.
- Take your best non-stick pan.
- Use medium heat to preheat.
- And then take a big spoon and splotch 3 servings of the batter into the pan.
- Cook to a golden brown on both sides.
- But that doesn’t necessarily mean they are done.
- You can test if they’re cooked properly by pressing the tops of the fritters.
They should be firm… - Serve with a spoon of plain yogurt or homemade tomato and basil sauce.
- Add salad or veg.
