Chickpea Flour, Corn & Courgette Fritters

Description

Makes 3 fritters.

If hungry, it’s perfectly okay to eat all 3. Otherwise, eat two as a main meal and set aside one for a snack.


Ingredients

  • 1/2 a medium courgette /zucchini, grated
  • 1/4 cup corn or peas [canned, frozen and thawed or fresh]
  • 3 flat tablespoons chickpea flour / also called besan
  • Onion powder, cracked pepper, and pinch of salt [optional]
  • You can add your own spices.

Instructions

  1. Grab a bowl and grate the courgette, then add all the other ingredients.
  2. Mix to make it into a sloppy batter.
  3. The grated courgette provides the moisture.
  4. Take your best non-stick pan.
  5. Use medium heat to preheat.
  6. And then take a big spoon and splotch 3 servings of the batter into the pan.
  7. Cook to a golden brown on both sides.
  8. But that doesn’t necessarily mean they are done.
  9. You can test if they’re cooked properly by pressing the tops of the fritters.
    They should be firm…
  10. Serve with a spoon of plain yogurt or homemade tomato and basil sauce.
  11. Add salad or veg.
