Italian Tomato And Basil Sauce

  • 1 Large brown onion, finely chopped
  • 2 Cloves garlic, finely chopped
  • 1/4 Birdseye chilli, chop and remove seeds
  • 1 Can whole peeled tomato (400ml)
  • 1 Can diced tomato (400ml)
  • 1 Cup vegetable stock
  • 2 Tablespoon extra virgin olive oil
  • 6 Basil leaves
  • Salt + Pepper


  1. Take heavy based pot and carefully heat olive oil on medium heat
  2. Gently sautée onions and garlic on medium heat for 15 minutes to bring out sweet flavours
  3. Add all other ingredients and bring to boil
  4. Turn down heat to a low simmer and reduce liquid by a third or half
  5. Adjust seasoning. I added extra chilli flakes
