
Italian Tomato And Basil Sauce
Ingredients
1 Large brown onion, finely chopped
- 2 Cloves garlic, finely chopped
- 1/4 Birdseye chilli, chop and remove seeds
- 1 Can whole peeled tomato (400ml)
- 1 Can diced tomato (400ml)
- 1 Cup vegetable stock
- 2 Tablespoon extra virgin olive oil
- 6 Basil leaves
- Salt + Pepper
Instructions
- Take heavy based pot and carefully heat olive oil on medium heat
- Gently sautée onions and garlic on medium heat for 15 minutes to bring out sweet flavours
- Add all other ingredients and bring to boil
- Turn down heat to a low simmer and reduce liquid by a third or half
- Adjust seasoning. I added extra chilli flakes
