It is a fact that raw foods contain heat sensitive vitamins and minerals so when we cook our food, the heating process breaks down the structure of the veggies so we can absorb more of their antioxidants. Some of the beneficial phytochemicals can be trapped in the tough cell walls of raw plant foods. By cooking specific veggies, they become even more nutritious.

Which vegetables release more antioxidants when cooked? Vegetables such as tomatoes, broccoli, mushrooms, carrots, pumpkin and even asparagus can have an increase in antioxidants once cooked. Therefore, it is highly recommended to cook these vegetables to improve your health since antioxidants are there to protect your cells against diseases.

When you eat soup or salad on their own, it’s just not as filling which can lead you to snacking more and risk increasing your weight. So why not add both? Soup and salad. Both are healthly meals and leads to a satisfied stomach. I also highly recommend adding some protein rich food such as legumes or tofu to gain more protein while eating your soup and salad. If you’re feeling extra naughty, add a little good fat like nuts or cashev cream. Only a small amount if you’re aiming for a healthy weight.
