Quick’n Easy Bean & Lentil Stew

This is for 4 servings

  • 100g rinsed drained sun-dried tomatoes, chopped
  • 1x 400g tin of chopped tomatoes
  • 1 cup of cooked cannellini beans
  • 1 cup of cooked lentils
  • 1 tablespoon of tahini
  • 1/4 teaspoon of ground chilli
  • 1 flat teaspoon sweet paprika
  • 1/2 cup or more of tasty vegetable stock
  • 2 cloves of garlic, crushed
  • 2 Tbs tamari sauce for a savoury boost
  • salt and pepper


  1. Drain beans and lentils into a colander, rinse them with water.
  2. Place beans and lentils in a large frying pan.
  3. Next drain and rinse the sun-dried tomatoes before adding to the pan. If they are too large, cut them into smaller pieces.
  4. Add tins of tomatoes, tahini, tamari sauce for an additional savoury taste, crushed garlic, chilli, paprika, salt and pepper.
  5. Add the vegetable broth to thin out.
  6. Simmer for 10 minutes until everything is nice and hot, then serve and enjoy!
  7. Serve with mashed cauliflower and a generous serving of green side vegetables.
