
Ingredients:
2 lbs Carrots (I like to use organic)
2 Onions
2 l Vegetable stock or use water and stock powder (or 3.5 pints )
2 tbsp chopped fresh coriander
½ tsp dried coriander powder
Salt/Pepper for seasoning
6 tbsp coconut milk

Peel and chop carrots and onions

Add vegetables to stock

Add dried coriander

Bring to the boil and then simmer for 30 minutes

Blend, using a hand-blender until smooth

Add salt and ground pepper to taste

Add 6 Tablespoons of coconut milk and stir

Add fresh coriander before serving
