Easy Zucchini Boats

     2 tbsp Fresh (chopped) or 1 tbsp Dried Basil
     0.50 cup Sliced Cherry Tomatoes
     2 tbsp Kalamata Olives Chopped small, also oil rinsed off
     0.50 cup Homemade Tomato Pasta Sauce (or pizza sauce)
     Medium Red Onion, Sliced
     4 Medium Zucchini/Courgette
     Nutritional Yeast (optional)

    Preheat oven to 400 F / 200 C

    Cut the zucchini in half lengthwise and scoop out the inside seeds.
    To help them lay flat on the pan, you can also cut a piece off the bottom of the 'boat'
    to create a flat surface.

    Mix tomato sauce and nutritional yeast for a cheesy taste if using.

    Spread a layer of sauce (about 1 tablespoon) inside each zucchini.

    Top with onions, olives and tomatoes.

    Bake for 20-25 minutes until zucchini is tender (don't let it go past tender as it will turn to mush)

    Top with basil and serve.
