
Take a heavy-based skillet and add the frozen vegetables.
Keep stirring until they wilt and collapse.
Add a little vegetable stock and add the herbs, spices and dried vegetables if using.
Add chopped tomatoes and tomato paste.
Add one cup vegetable stock.
Bring to the boil and then turn down to simmer.
Keep stirring and adding more vegetable stock as the liquid cooks.
Once it is ready, add half a cup of cooked beans along with half a cup of cooked grains or buckwheat pasta. Note:- the beans and pasta will heat through in your serving bowl.
