Winter Salad With Maple Pecans

Ingredients

  • 2 cups of mixed green leaves
  • 1 bell pepper, diced
  • 1/2 cup roasted pumpkin cubes
  • 1/2 cup steamed green beans
  • 1/3 cup pecan halves or pieces
  • 1 TBS maple syrup
  • 1/2 cup of tinned, drained and rinsed kidney beans
  • 1 TBS balsamic vinegar
  • S+P

Instructions

  1. Preheat oven to 180C
  2. Place pecans in a dish, add maple syrup and stir to coat
  3. Place nuts onto baking sheet into oven at 180C
  4. Toast in oven for 5-8 minutes.
  5. Place all other ingredients into a salad bowl
  6. Toss
  7. Top with maple roasted pecans
