
Winter Salad With Maple Pecans
Ingredients
2 cups of mixed green leaves
- 1 bell pepper, diced
- 1/2 cup roasted pumpkin cubes
- 1/2 cup steamed green beans
- 1/3 cup pecan halves or pieces
- 1 TBS maple syrup
- 1/2 cup of tinned, drained and rinsed kidney beans
- 1 TBS balsamic vinegar
- S+P
Instructions
- Preheat oven to 180C
- Place pecans in a dish, add maple syrup and stir to coat
- Place nuts onto baking sheet into oven at 180C
- Toast in oven for 5-8 minutes.
- Place all other ingredients into a salad bowl
- Toss
- Top with maple roasted pecans
